1 cup shelled unsalted sunflower seeds
1 cup flour
1 cup whole wheat flour
1 tbs. baking powder
1/2 tsp salt
1 egg
1/4 cup vegetable oil
3 tbs honey
1 cup low-fat milk.
Preheat oven 375 F
Place 1/3 cup sunflower seeds in a blender or food processor.Process until finely ground.
In a bowl combine ground sunflower seed,flour,baking powder and salt.
In another bowl beat egg and stir in honey and oil.
Add dry ingredients but do not over mix.
Stir in remaining sunflower seeds.
Grease muffin tins.
Fill muffin tins 2/3 full.
Bake for 25 to 30 minutes.
A big healthy muffin for breakfast will hit the spot if you are busy and on the go and don`t have time for breakfast! Or for an afternoon snack, treat yourself to a nice big cupcake!

Whole Wheat Cranberry Muffins
Combine and let stand for 5 minutes.
1 cup all-bran cereal
1 1/4 cups milk
Then:
Add 1 egg beaten
1 tbs grated orange peel
1 1/2 cups whole wheat flour
1/4 tsp salt
1 cup cranberries
3/4 cup chopped walnuts.
Mix all together but do not over mix.
Preheat oven to 400 F
Grease muffin tins.
Fill muffin tins 2/3 full.
Bake 20 to 25 minutes.
