Apple Spice Cupcakes

1/2 cup lard
1 1/4 cups white sugar
1/2 tsp salt
1 tsp cinnamon
1/2 cup nuts
1 tsp vanilla
2 eggs
1/4 tsp. soda
1/2 tsp. nutmeg
1 cup finely chopped apples
2 cups flour
2 tsps baking powder
2 tsps coffee
1/2 tsp all spice
3/4 cup water

Preheat oven to 375 F

Mix lard with sugar the add eggs.
Mix in all the spices with the salt.
Mix in apples
Mix in flour,baking powder,baking soda and coffee.
Do not over mix.
Lastly add water.

Fill muffin cups 2/3 full.
Bake for 25 to 30 minutes.

Peanut Butter Cupcakes

Mix 1/2 cup peanut butter with 1 1/2 cups brown sugar & 1/3 cup lard.
Then add 2 eggs,1/2 tsp. salt.
Stir in 3/4 cup milk and 1 tsp. vanilla.
Add 2 cups flour and 2 tsps baking powder.

Fill muffin cups 2/3 full.
Bake at 375 F for 20 to 25 minutes.

Fruit Cake Gems (The best i ever had!)

First:
1 cup raisins
1 cup chopped dates
1 cup mixed candied peel
1 cup chopped red & green cherries
1 cup mixed candied fruit
1 cup nuts
1/4 cup flour
Mix all together and set aside.

In another bowl mix:
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
2 tbs. molasses
1/2 tsp mace
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp cloves (ground)
1 tsp salt
1/4 cup fruit juice
Mix well then add fruit.
Stir until well blended.
Then add:
1 1/4 cups flour
1/2 tsp baking powder
1/2 tsp baking soda

Preheat oven to 325 F
Fill muffin cups 2/3 full.
Bake for 30 minutes.

These are just the greatest especially around the holidays.
I make the all year round.

Carrot Muffins

2 eggs
1/2 plus 2 tbs vegetable oil
1/2 cup sugar
1 1/2 cups grated carrot
1/2 cup raisins
1/4 cup chopped walnuts
1 1/2 cups flour
2 1/4 tsps baking powder
1/4 tsp salt
1 1/2 tsps cinnamon
1/2 tsp nutmeg

Preheat oven to 400 F
Grease muffin tins.

Mix oil, eggs and sugar until smooth.
Stir in carrots,raisins and nuts.Stir in dry ingredients.
Fill muffin tins 2/3 full
Bake for 25 minutes.

Fruit Muffins

1/4 cup lard melted
Mix with 1/4 cup brown sugar the add 1 egg,1/4 tsp salt and 1/2 tsp cinnamon.
Mix well.
Then add:
1 cup chopped apples
1/2 cup milk
1 1/2 cups flour
2 tsps baking powder.
Mix until blended.

Fill muffin cups 2/3 full
Bake at 375 F 25 to 30 minutes.

These are great for breakfast or just for a snack!

Bran Muffins # 1

Mix 1/3 cup lard with 2tbs brown sugar the add 1/2 cup molasses.
Beat in 1 egg and 1/2 tsp salt.
Stir in 3/4 cup sour milk.
Add 2 cups bran cereal
Mix well.
Then add:
1 1/2 cups flour
1 tsp. baking soda
1 tsp. Baking powder

Mix well.

Pour into muffin cups until 2/3 full.

Bake at 400 F for 15 to 18 minutes.

Great for breakfast!

Banana Nut Nuffins

1/4 cup oil
1/4 cup molasses
1 cup mashed bananas
1/4 tsp nutmeg
1 tbs grated orange peel
3/4 cup milk
1/4 cup raisins
1 egg
3/4 cup milk
1 cup flour
1/3 cup whole wheat flour
1 1/2 cups wheat cereal
2 tsps baking powder
1 tsp baking soda

Mix in order given.

Fill muffin cups 2/3 full
Bake at 375 F for 25 minutes.

Blueberry Buttermilk Muffins

6 tbs. butter softened
2 eggs
1 cup buttermilk
2 tsps vanilla
2 1/4 cups flour
1/2 tsp salt
1 tsp baking soda
2 tsps baking powder
1/2 tsp nutmeg
1 1/2 cups blueberries

Preheat oven to 400 F

Combine butter and sugar .
Then add eggs,vanilla and buttermilk.
Then add dry ingredients. Do not over stir.
Fold in blueberries.

Grease muffin cups or use paper muffin liners.
Fill muffin cups 2/3 full.
Bake for 20 minutes.

Bran Muffins # 2

1 cup bran cereal
1 cup oat bran
1 1/4 cups flour
2 tsps. baking powder
1/2 tsp salt
2 eggs
1 cup buttermilk
1/3 cup honey
1/2 cup vegetable oil

Preheat oven to 400 F
Grease muffin tins

In a bowl combine oat bran,flour,baking powder and salt,set aside.
In another bowl combine eggs slightly beaten with buttermilk,honey and oil.
Add dry ingredients and stir just until blended.
You can also add raisins or other fruits to these muffins if you wish.

Fill muffin tins 2/3 full.
Bake for 20 to 25 minutes.

Very healthy!

Granola Muffins

1 stick of butter melted
3/4 cup white sugar
2 eggs slightly beaten
1/2 cup milk
1 1/2 cups flour
1 tbs baking powder
1/2 tsp salt
1 1/2 cups unsweetened granola
1/2 cup of dried fruit ( your choice )

Preheat oven to 350 F
Grease muffin tins

Blend butter,sugar, eggs and milk.Gradually stir in dry ingredients.
Fill muffin tins 2/3 full
Bake for 25 to 30 minutes.

These muffins are very healthy!

Maple Oatmeal Muffins

2 eggs
1/2 cup brown sugar
1 1/4 cups buttermilk
1/4 cup maple syrup
1 1/4 cups whole wheat flour
1 1/2 cups rolled oats
1 tsp baking powder
1 tsp soda
1/2 tsp salt

Preheat oven to 400 F

Beat eggs and brown sugar until smooth.
Add buttermilk and maple syrup,blend well.
Add dry ingredients and mix together.

Fill muffin tins 2/3 full.
Sprinkle each muffin with 3/4 tsp rolled oats (optional)

Bake for 20 to 25 minutes.

Sunflower Wheat muffins

1 cup shelled unsalted sunflower seeds
1 cup flour
1 cup whole wheat flour
1 tbs. baking powder
1/2 tsp salt
1 egg
1/4 cup vegetable oil
3 tbs honey
1 cup low-fat milk.

Preheat oven 375 F

Place 1/3 cup sunflower seeds in a blender or food processor.Process until finely ground.
In a bowl combine ground sunflower seed,flour,baking powder and salt.
In another bowl beat egg and stir in honey and oil.
Add dry ingredients but do not over mix.
Stir in remaining sunflower seeds.

Grease muffin tins.
Fill muffin tins 2/3 full.
Bake for 25 to 30 minutes.

Whole Wheat Cranberry Muffins

Combine and let stand for 5 minutes.
1 cup all-bran cereal
1 1/4 cups milk

Then:
Add 1 egg beaten
1 tbs grated orange peel
1 1/2 cups whole wheat flour
1/4 tsp salt
1 cup cranberries
3/4 cup chopped walnuts.

Mix all together but do not over mix.

Preheat oven to 400 F

Grease muffin tins.
Fill muffin tins 2/3 full.
Bake 20 to 25 minutes.
